Ingredients
- 4 chicken cutlets
- 1.5 cups flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 cups chicken broth
- 2 tablespoons butter
- 1 bunch collard greens, chopped
- 2 slices bacon or smoked turkey
- Oil for frying
- Salt and pepper to taste

Season chicken and dredge in flour seasoned with garlic powder and paprika (save 2 tbsp flour).

Fry cutlets in oil until golden and cooked through; drain.

For the gravy: melt butter, whisk in the reserved flour, then slowly add broth and simmer until thick.

For the greens: simmer collards with bacon or smoked turkey until tender, 30-40 minutes.

Plate a bed of greens, set the fried chicken on top.
