Shrimp Creole over Yellow Rice
Plump shrimp simmered in a spiced tomato creole sauce over yellow rice, with a side of greens

Ingredients
- 1.5 lbs shrimp, peeled and deveined
- 1 can (28 oz) crushed tomatoes
- 1 bell pepper, diced
- 1 onion, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 2 cups yellow rice
- 2 tablespoons oil
- Hot sauce to taste
- Salt and pepper to taste

Cook yellow rice according to package directions; keep warm.

Sauté onion, bell pepper, celery, and garlic in oil until soft (the "holy trinity").

Add crushed tomatoes and Cajun seasoning; simmer 15 minutes.

Stir in shrimp and cook just until pink, 4-5 minutes.

Adjust seasoning and add hot sauce to taste.

Spoon the shrimp creole over yellow rice and serve with greens.
Liz's Tip:
Add the shrimp last and pull them off the heat as soon as they curl — overcooked shrimp turn rubbery.
